2009 Cabernet Sauvignon
Colour
Impenetrable dark red with light red and purple hues.
Bouquet
This wine is rich with sweet licorice and black berry fruit aromas with a hint of vanilla from well integrated oak.
Palate
Finely structured wine with hints of cinnamon and chocolate nuances. The palate shows elegance and length with dark plum fruit and cashew, with a smokey oak influence. There is a lot of complexity of flavours and mid palate richness. The obvious finesse and length of this wine shows it has great cellaring potential and could be a true treasure over the years to come.
Winemaking
Fermented in stainless steel, small volume fermenters to maintain strong fruit flavour from skins. The wine then went into American and French oak barrels for the remainder of ferment where it spent and extended period of time to allow full flavour development.
Cellaring
Drinking superbly now but for those patient enough to hold off this will develop beautifully for up to ten years.
